Back by popular demand: Daphne’s traditional cheesemaking course.

At Twa Corbies Hollow Organic Farm and Bushcraft School, we have been raising our own goats, producing our own dairy and making our own cheese for years. From the ground up, it’s done the wholesome traditional way.

This class will explore making cheese with any kind of milk. Daphne will walk students through the entire process from start to finish.

    Good Morning

    If I may, I would like to pose a few general questions. I am interested in a few of the courses you offer and understand and appreciate the need to not disclosing your exact location. I am from the HRM (Lower Sackville) and my only mode of transportation is my Sportster motorcycle. I am curious if there any campsites or B &B near you that I might stay overnight . Also curious on the condition of the 6 miles of backroad … I have taken the bike on gravel/ dirt before but probably for not that much of a distance.

    • Hello Chris,

      Antigonish is about 45 minutes away, where there are B&Bs and small hotels. I don’t think there is anything closer.

      The road that leads to our place is very old black top and is riddled with pot holes. It is traversable. You don’t need a 4×4 or such like to traverse it, but you should proceed with caution. People come here regularly for classes without problem but you just want to keep your speed down (no faster than 50 kmh) for the last 3 miles of the trip.

    • Hi Megan, I will require you and your husbands’ name, email address and phone number. To reserve spaces, the fee is $25 each (applicable toward the full cost of the course, which is only $50). Or you can just pay in advance.

    • Hi Laura,

      The class will be at our homestead in the highlands between New Glasgow and Antigonish, about 45 minutes from either town. The general area is Kenzieville. The class will be June 18, starting from 9:00 a.m. to 3:00 p.m.
