Jerusalem Artichokes: The Ultimate Food Yield Per Square Foot

jerusalem artichoke harvest smallWe began harvesting Jerusalem artichokes today. We probably should have begun 2 or 3 weeks ago soon as the blossoms died back, but it’s important to let them stay in the ground til fully ripe. Nothing, but nothing, gives as much food per square foot. We only harvested two dozen square feet worth and filled a whole crate: about 30 to 35 lbs. That’s around 1.5 pounds of food per foot. And that’s only one tiny portion of the Jerusalem artichoke growing area. And entire 60×4 foot bed is devoted to them beside the Potato Patch, plus an entire garden of them near the Elfwood. Rough estimate: we grew over a thousand pounds of them in those two smallish areas
